Apple Cinnamon Millet

1/3 cup millet
1/2 cup soy milk
1 apple, diced
garnish: maple syrup and cinnamon
In a large saucepan, cook millet
for 3-4 minutes
, stirring constantly.
When a nutty smell emerges, add 2 cups of boiling water and simmer, covered, for about 20 minutes.
When water is absorbed, remove from heat and let stand 5 minutes before taking out the kernels with a fork.
Combine millet, soy milk, ½ cup water and the diced apples over medium heat.
When the mixture begins to boil, add the remaining ingredients (except garnish).
Stir constantly until mixture thickens and there is no more liquid.
Remove from heat, cover and let stand 10 minutes.
Pour into a bowl and garnish with maple syrup and cinnamon.
