Ingredients: 2 tbsp oil (preferably olive) 1 onion, minced 2 stalks celery, minced 2 carrots, chopped 1 green bell pepper, chopped 1 clove garlic, minced 1 cup brown rice, cooked in 2 cups of water 1 cup cooked brown lentils 2 tbsp soya or tamari sauce Directions: 1. Cook all vegetables and garlic in oil until the onions are translucent. 2. Add lentils and mix. 3. Add rice and mix again. 4. Add soya sauce, mix, and reheat. Serve.
