Bananas and Chia Seeds in Coconut Milk

Ingredients for 5 servings:
60 mL (1/4 cup) of water
60 mL (1/4 cup) of chia seeds
250 mL of unsweetened coconut milk
85 mL of sugar
a pinch of salt
3 ripe bananas, but still firm, peeled
1 tbsp of sesame seeds
1. Heat water in a medium saucepan over low heat. Add the chia seeds. Stir for 2 minutes.
2. Add the coconut milk, sugar and salt. Mix well. Cook over low heat for at least 10 minutes, stirring constantly.
3. Cut each banana in half lengthwise, then each half into three. Add the banana slices to the saucepan. Cook another 5 minutes.
4. Pour into small bowls and garnish with sesame seeds or coconut.
